Tzatziki
Ingredients
- 2 english cucumbers
- 6 cloves garlic, peeled
- 2 lbs greek style yogurt
- 2 tbsp red wine vinegar
- 4 tbsp olive oil
Procedure
- Grate cucumber and place in colander, weighted down with a plate for 15 minutes, so that the liquid drains out.
- Gather in towel and squeeze out any remaining liquid.
- Puree garlic and salt.
- mix cucumber, garlic, yogurt, vinegar, and pepper into a food processor. Blend until smooth, slowly adding oil while blades are running.
