Tzatziki

Ingredients

  • 2 english cucumbers
  • 6 cloves garlic, peeled
  • 2 lbs greek style yogurt
  • 2 tbsp red wine vinegar
  • 4 tbsp olive oil

Procedure

  1. Grate cucumber and place in colander, weighted down with a plate for 15 minutes, so that the liquid drains out.
  2. Gather in towel and squeeze out any remaining liquid.
  3. Puree garlic and salt.
  4. mix cucumber, garlic, yogurt, vinegar, and pepper into a food processor. Blend until smooth, slowly adding oil while blades are running.
