Satay

Ingredients

Marinade

  • 12 boneless chicken breast
  • 6 cloves crushed garlic
  • 3 in piece ginger root, finely grated
  • 6 tbsp Thai fish sauce
  • 6 tbsp light soy sauce
  • 3 tbsp clear honey

Sauce

  • 1 C crunchy peanut butter
  • 3 fresh red chilli seeded and finely chopped
  • juice of 3 limes
  • 1.5 C coconut milk

Actions

  1. Put sauce ingredients in food processor.
  2. Blend until smooth, then check seasoning
  3. Cover and set aside
  4. Slice each breast half into 4 long strips
  5. Put marinade ingredients in large bowl and mix.
  6. Add chicken strips. Marinate for 30 min.
  7. Soak skewers in water.
  8. Broil chicken and serve with sauce
