Satay
Ingredients
Marinade
- 12 boneless chicken breast
- 6 cloves crushed garlic
- 3 in piece ginger root, finely grated
- 6 tbsp Thai fish sauce
- 6 tbsp light soy sauce
- 3 tbsp clear honey
Sauce
- 1 C crunchy peanut butter
- 3 fresh red chilli seeded and finely chopped
- juice of 3 limes
- 1.5 C coconut milk
Actions
- Put sauce ingredients in food processor.
- Blend until smooth, then check seasoning
- Cover and set aside
- Slice each breast half into 4 long strips
- Put marinade ingredients in large bowl and mix.
- Add chicken strips. Marinate for 30 min.
- Soak skewers in water.
- Broil chicken and serve with sauce
