Sweet and Sour Salad

Serves 16

Ingredients

  • 4 large garlic clove chopped
  • 8 small thai chilies, chopped
  • 2C carrots, julienned
  • 8C white cabbage, thinly sliced
  • 8 green beans cut into 1" length
  • 8 tomatoes, chopped
  • 6 tbsp fish sauce
  • .75C lemon juice
  • .75C sugar
  • .25C ground dried shrimp
  • .5C crushed roasted nuts
  • basil leaves to garnish
  • 1 frisée lettuce, separated into leaves, to serve

Procedure

  1. Grind the garlic and chilies into a paste.
  2. transfer to a bowl and add carrots, cabbage, green beans, tomatoes, fish sauce, lemon juice, sugar, ground dried shrimp, and nuts.
  3. mix well
  4. Arrange a bed of lettuce on platters and top with salad. Garnish with basil.
