Summer Tomato, Avocado, and Chile Salad

Serves 16 to 24

Ingredients

  • 4 small jalapeņo chile with seeds, minced
  • 1 C freshly squeezed lime juice
  • 2 C extra-virgin olive oil
  • salt to taste
  • 2 cloves garlic, minced
  • 8 large ripe tomatoes cut into large chunks
  • 4 small sweet onion such as Bermuda ot Vidalia sliced .25" thick and separated into rings
  • 8 medium sized, ripe avocados, sliced
  • Cilantro sprigs for garnish
  • Freshly ground black pepper

Procedure

  1. Whisk together jalapeņo, lime juice, oil, pinch of salt, and garlic.
  2. In a large serving bowl, toss together vinaigrette with tomatoes and onion until well coated.
  3. Add the avocado and toss gently
  4. Season with salt and pepper and garnish with cilantro
