Summer Tomato, Avocado, and Chile Salad
Serves 16 to 24
Ingredients
- 4 small jalapeņo chile with seeds, minced
- 1 C freshly squeezed lime juice
- 2 C extra-virgin olive oil
- salt to taste
- 2 cloves garlic, minced
- 8 large ripe tomatoes cut into large chunks
- 4 small sweet onion such as Bermuda ot Vidalia sliced .25" thick and separated into rings
- 8 medium sized, ripe avocados, sliced
- Cilantro sprigs for garnish
- Freshly ground black pepper
Procedure
- Whisk together jalapeņo, lime juice, oil, pinch of salt, and garlic.
- In a large serving bowl, toss together vinaigrette with tomatoes and onion until well coated.
- Add the avocado and toss gently
- Season with salt and pepper and garnish with cilantro
