Stir-Fried Shrimp with Coconut
Ingredients
- .5 C grated unsweetened coconut
- 4 garlic cloves crushed
- 2 serrano chili split lengthwise
- 2 tsp salt
- Ground masala
- 2 tsp coriander
- .5 tsp cayenne
- .5 tsp turmeric
- 6 tbsp oil
- 2 tsp mustard seeds
- 4 dried red chilies
- 20 fresh curry leaves
- 3 lbs shrimp, shelled and deveined, cut into .25" pieces
Procedure
- Combine coconut, garlic, green chili, salt, and ground masala in a bowl with .5 C water to make a moist ball.
- In a wok, heat the oil over medium-high heat.
- Add the mustard seeds and cover.
- When popped, toss in red chilies and curry leaves.
- Put in shrimp and stir fry for 1 minute.
- Stir in the coconut mixture and continue frying for another 3 minutes or until the shrimp are just cooked through.
