Stir-Fried Shrimp with Coconut

Ingredients

  • .5 C grated unsweetened coconut
  • 4 garlic cloves crushed
  • 2 serrano chili split lengthwise
  • 2 tsp salt
  • Ground masala
    • 2 tsp coriander
    • .5 tsp cayenne
    • .5 tsp turmeric
  • 6 tbsp oil
  • 2 tsp mustard seeds
  • 4 dried red chilies
  • 20 fresh curry leaves
  • 3 lbs shrimp, shelled and deveined, cut into .25" pieces

Procedure

  1. Combine coconut, garlic, green chili, salt, and ground masala in a bowl with .5 C water to make a moist ball.
  2. In a wok, heat the oil over medium-high heat.
  3. Add the mustard seeds and cover.
  4. When popped, toss in red chilies and curry leaves.
  5. Put in shrimp and stir fry for 1 minute.
  6. Stir in the coconut mixture and continue frying for another 3 minutes or until the shrimp are just cooked through.
