Marinara

Enough for 4 lbs pasta

Ingredients

  • 3/4 C extra-virgin olive oil
  • 1 C finely chopped parsley
  • 4 Medium onion, finely chopped
  • 4 small carrot peelet and finely chopped
  • 1 celery stalk with leaves, finely chopped
  • 8 cloves minced garlic
  • 2 C packed chopped basil leaves
  • 4 sprigs rosemary, sage, thyme
  • 10 lbs ripe tomatoes, peeled, seeded, and chopped (or 6 28oz can whole tomatoes with juice)

Procedure

  1. Heat oil in a large skillet over medium heat
  2. Add parsley, onion, carrot, celery
  3. Cook until onions are golden brown
  4. Add garlic, basic, rosemary, sage, thyme
  5. Cook stirring for 30 seconds
  6. Stir in tomatoes and season with salt and pepper
  7. Simmer uncovered until the sauce is thickened
