Marinara
Enough for 4 lbs pasta
Ingredients
- 3/4 C extra-virgin olive oil
- 1 C finely chopped parsley
- 4 Medium onion, finely chopped
- 4 small carrot peelet and finely chopped
- 1 celery stalk with leaves, finely chopped
- 8 cloves minced garlic
- 2 C packed chopped basil leaves
- 4 sprigs rosemary, sage, thyme
- 10 lbs ripe tomatoes, peeled, seeded, and chopped (or 6 28oz can whole tomatoes with juice)
Procedure
- Heat oil in a large skillet over medium heat
- Add parsley, onion, carrot, celery
- Cook until onions are golden brown
- Add garlic, basic, rosemary, sage, thyme
- Cook stirring for 30 seconds
- Stir in tomatoes and season with salt and pepper
- Simmer uncovered until the sauce is thickened
