Roasted Habanero Salsa
Ingredients
- 1 tbsp plus 1/4 C virgin olive oil
- 1 tsp minced garlic
- 6 ripe plum tomatoes, halved
- salt and pepper
- 10 habanero chiles, stems removed
- 1/4 C lime juice (about 2 limes)
- 1/4 C chopped cilantro
Method
- In a small bowl, combine the tbsp olive oil wand garlic and mix well.
- Rub the tomato halves with this and sprinkle with salt and pepper.
- Roast in 500 degree oven for 15 to 20 minutes until they take on color.
- Remove from oven and allow to cool. Dice.
- Grill habanero peppers over a medium hot fire until sightly colored (2 to 3 minutes).
- Mince peppers (be careful not to touch them!)
- Mix with tomatoes, 1/4 C olive oil, lime juice and cilantro.
- Prepare for launch, this stuff is rocket fuel.
