Roasted Habanero Salsa

Ingredients

  • 1 tbsp plus 1/4 C virgin olive oil
  • 1 tsp minced garlic
  • 6 ripe plum tomatoes, halved
  • salt and pepper
  • 10 habanero chiles, stems removed
  • 1/4 C lime juice (about 2 limes)
  • 1/4 C chopped cilantro

Method

  1. In a small bowl, combine the tbsp olive oil wand garlic and mix well.
  2. Rub the tomato halves with this and sprinkle with salt and pepper.
  3. Roast in 500 degree oven for 15 to 20 minutes until they take on color.
  4. Remove from oven and allow to cool. Dice.
  5. Grill habanero peppers over a medium hot fire until sightly colored (2 to 3 minutes).
  6. Mince peppers (be careful not to touch them!)
  7. Mix with tomatoes, 1/4 C olive oil, lime juice and cilantro.
  8. Prepare for launch, this stuff is rocket fuel.
