Rice with Mint
Serves 24
Ingredients
- .75 C corn oil
- 6 C converted rice
- 3 C minced white onion
- 9 C water
- 2 tbsp salt
- 36 fresh mint leaves
Procedure
- Heat the oil in a sauce pan over high heat until hot but not smoking
- Add the onion and sauté until golden, about 5 minutes
- Add the rice, lower heat to medium, and sauté until golden brown, about 2 minutes
- Add the water, salt, and mint and bring to a boil
- Cover, reduce heat to low and simmer about 15 minutes
