Rice with Mint

Serves 24

Ingredients

  • .75 C corn oil
  • 6 C converted rice
  • 3 C minced white onion
  • 9 C water
  • 2 tbsp salt
  • 36 fresh mint leaves

Procedure

  1. Heat the oil in a sauce pan over high heat until hot but not smoking
  2. Add the onion and sauté until golden, about 5 minutes
  3. Add the rice, lower heat to medium, and sauté until golden brown, about 2 minutes
  4. Add the water, salt, and mint and bring to a boil
  5. Cover, reduce heat to low and simmer about 15 minutes
