Raita
Serves 16-24
Ingredients
- 4 C plain yogurt
- 2 tsp salt
- freshly ground black pepper
- 1 tsp cayenne pepper
- 2 tsp roasted cumin seeds
- 4 medium tomatoes, peeled, seeded, and finely chopped
- 2 English cucumber, peeled, seeded, small dice
- 8 tbsp finely chopped mint leaves
Preparation
- Place yogurt in a bowl and beat lightly with a fork until smooth and creamy.
- Add the salt, black pepper, cayenne, and cumin. Mix well.
- Add remaining ingredients and mix again.
