Raita

Serves 16-24

Ingredients

  • 4 C plain yogurt
  • 2 tsp salt
  • freshly ground black pepper
  • 1 tsp cayenne pepper
  • 2 tsp roasted cumin seeds
  • 4 medium tomatoes, peeled, seeded, and finely chopped
  • 2 English cucumber, peeled, seeded, small dice
  • 8 tbsp finely chopped mint leaves

Preparation

  1. Place yogurt in a bowl and beat lightly with a fork until smooth and creamy.
  2. Add the salt, black pepper, cayenne, and cumin. Mix well.
  3. Add remaining ingredients and mix again.
