Pork with Hot Sauces

Serves 16

Ingredients

  • 3 lb pork loin
  • 2 tsp salt
  • 1 tsp white pepper
  • 4 tbsp butter
  • 4 tbsp oil
  • 12 garlic cloves, peeled
  • 2" piece fresh ginger, peeled and chopped
  • 8 red chilies, chopped
  • 2 tbsp ground cumin
  • 2 cucumber finely sliced to serve

Chili and ginger sauce

  • 8 red chilies
  • 4" piece fresh ginger, peeled and chopped
  • 1C grated onions
  • salt

Tomato and chili sauce

  • 8 tomatoes, skinned and chopped
  • 8 garlic cloves, crushed
  • 4 tsp hot chili powder
  • salt

Procedure

  1. slice pork thinly and rub with salt and pepper.
  2. Heat butter and oil in wok over medium heat.
  3. Add the pork and stir fry until lightly browned. Remove and keep warm.
  4. Chop the garlic finely and add to the wok with the ginger, chilies, and cumin.
  5. Stir fry for 2 minutes over low heat, or until the meat is tender.
  6. Return the pork to the wok. Stir fry to 2 minutes until the pork is tender.
  7. Add sprinkles of water to keep moist if necessary.

Chili and ginger sauce

  1. Put chilies and ginger, onions, and salt in a mortar and pound to a smooth paste.

Tomato and chili sauce

  1. Place the chopped tomatoes and garlic in a small bowl.
  2. Mix in a good pinch of sugar, the hot chili powder, and salt to taste.

Serve the pork with cucumber and the two hot sauces.
