Pork with Hot Sauces
Serves 16
Ingredients
- 3 lb pork loin
- 2 tsp salt
- 1 tsp white pepper
- 4 tbsp butter
- 4 tbsp oil
- 12 garlic cloves, peeled
- 2" piece fresh ginger, peeled and chopped
- 8 red chilies, chopped
- 2 tbsp ground cumin
- 2 cucumber finely sliced to serve
Chili and ginger sauce
- 8 red chilies
- 4" piece fresh ginger, peeled and chopped
- 1C grated onions
- salt
Tomato and chili sauce
- 8 tomatoes, skinned and chopped
- 8 garlic cloves, crushed
- 4 tsp hot chili powder
- salt
Procedure
- slice pork thinly and rub with salt and pepper.
- Heat butter and oil in wok over medium heat.
- Add the pork and stir fry until lightly browned. Remove and keep warm.
- Chop the garlic finely and add to the wok with the ginger, chilies, and cumin.
- Stir fry for 2 minutes over low heat, or until the meat is tender.
- Return the pork to the wok. Stir fry to 2 minutes until the pork is tender.
- Add sprinkles of water to keep moist if necessary.
Chili and ginger sauce
- Put chilies and ginger, onions, and salt in a mortar and pound to a smooth paste.
Tomato and chili sauce
- Place the chopped tomatoes and garlic in a small bowl.
- Mix in a good pinch of sugar, the hot chili powder, and salt to taste.
Serve the pork with cucumber and the two hot sauces.
