Ingredients

  • Green plantains
  • Olive oil for frying

Procedure

  1. Peel plantains and cut into slices 1.5" thick
  2. Arrange in skillet, cover with oil.
  3. Cook on gentle heat until tender but not golden.
  4. Remove the slices, drain, then flatten to about .5" thick.
  5. Put .5C water and a tablespoon of salt into a bowl.
  6. Wet the slices in the water then fry in very hot oil until golden brown.
  7. Drain on paper towel.
