Ingredients
- Green plantains
- Olive oil for frying
Procedure
- Peel plantains and cut into slices 1.5" thick
- Arrange in skillet, cover with oil.
- Cook on gentle heat until tender but not golden.
- Remove the slices, drain, then flatten to about .5" thick.
- Put .5C water and a tablespoon of salt into a bowl.
- Wet the slices in the water then fry in very hot oil until golden brown.
- Drain on paper towel.
