Penne con Salsa di Pomodori Picante

Serves 24

Ingredients

  • 48 anchovy fillets, chopped
  • 12 tomatoes, chopped
  • 2 C Gaeta black olives
  • 1 C capers, chopped
  • 4 large cloves garlic, chopped
  • .5 C chopped fresh flat leaf parsley
  • .5 C chopped fresh basil
  • 1 tsp red pepper flakes
  • 1 C extra-virgin olive oil
  • salt to taste
  • 4 lbs penne

Process

  1. Combine anchovies, tomatoes, olives, capers, garlic, parsley, basil, chile, salt, and olive oil. Let stand for 1 hour.
  2. Cook penne until al dente
  3. Drain the pasta, add the sauce, and toss well. Adjust seasoning to taste. Serve immediately.
