Penne con Salsa di Pomodori Picante
Serves 24
Ingredients
- 48 anchovy fillets, chopped
- 12 tomatoes, chopped
- 2 C Gaeta black olives
- 1 C capers, chopped
- 4 large cloves garlic, chopped
- .5 C chopped fresh flat leaf parsley
- .5 C chopped fresh basil
- 1 tsp red pepper flakes
- 1 C extra-virgin olive oil
- salt to taste
- 4 lbs penne
Process
- Combine anchovies, tomatoes, olives, capers, garlic, parsley, basil, chile, salt, and olive oil. Let stand for 1 hour.
- Cook penne until al dente
- Drain the pasta, add the sauce, and toss well. Adjust seasoning to taste. Serve immediately.
