Mung Dal with Green Chilies
Serves 16
Ingredients
- 4 C hulled and split mung dal
- 1 tsp turmeric
- 1 to 1.5 tbsp salt
- .75 C oil or ghee
- 2 med onion sliced into fine half-rings
- 8 cloves garlic, lightly crushed
- 4 to 12 fresh hot green chilies cut into 1 inch lengths
- 3/4 C coarsly chopped cilantro
Directions
- wash the dal in several changes of water and drain
- Combine dal with 4 Q water in a lidded pot and bring to boil.
- Do not let the dal boil over, turn the heat down as necessary.
- Skim the scum that rises to the surface.
- Add the turmeric.
- Reduce heat to low and simmer gently until the dal is tender (40 to 50 min) partially covered.
