Mung Dal with Green Chilies

Serves 16

Ingredients

  • 4 C hulled and split mung dal
  • 1 tsp turmeric
  • 1 to 1.5 tbsp salt
  • .75 C oil or ghee
  • 2 med onion sliced into fine half-rings
  • 8 cloves garlic, lightly crushed
  • 4 to 12 fresh hot green chilies cut into 1 inch lengths
  • 3/4 C coarsly chopped cilantro

Directions

  1. wash the dal in several changes of water and drain
  2. Combine dal with 4 Q water in a lidded pot and bring to boil.
  3. Do not let the dal boil over, turn the heat down as necessary.
  4. Skim the scum that rises to the surface.
  5. Add the turmeric.
  6. Reduce heat to low and simmer gently until the dal is tender (40 to 50 min) partially covered.
