Mango Tomatillo Salsa

Ingredients

  • 1 12-ounce can tomatillos, drained
  • 1/2 C pineapple juice
  • 1/4 C white vinegar
  • 1 tbsp minced garlic
  • 1 tbsp minced red or green chile pepper
  • 1/2 C chopped cilantro
  • 2 tbsp cumin seeds
  • 6 tbsp lime juice (about 3 limes)
  • 3 ripe but firm mangoes, peeled, pitted, and diced small
  • 1 red onion
  • 1 red bell pepper, diced small
  • 1 green bell pepper, diced small

Method

  1. Puree tomatillos, pineapple juice, vinegar, garlic, chiles, cilantro, cumin seeds, and lime juice.
  2. Place mangoes, onions, and bell peppers in a medium bowl, add puree and mix well.
