Long Bean Sambal
Serves 16 with other dishes
Ingredients
Rempah
- 20 fresh red jalapeņo chiles, sliced
- 8 medium onion, sliced
- 20 cloves garlic
- 1" cube blachan
- 1 C vegetable oil
Main
- 6 tbsp dried shrimp
- 2 lbs long beans, trimmed and cut into 1" lengths
- 1 1/3 C water
- 4 tsp sugar
- 2 tsp salt
Procedure
- Cover dried shrimp with water for 10 minutes. Drain. Mince find in a food processor or blender, set aside.
- Grind the chiles, shallots, garlic, and blachan to a smooth paste. Add water if needed.
- Heat the oil in a wok over medium heat.
- Add the ground mixture, and fry stirring constantly, until completely combined with the oil, about 3 to 5 minutes.
- When the rempah is cooked, add the shrimp.
- Cook over medium high heat until the mixture is crumbly.
- Toss in green beans, stir fry for 2 minutes.
- Add water and season with sugar and salt.
- Stir-fry quickly until the sauce reduces and glazes the beans
