Long Bean Sambal

Serves 16 with other dishes

Ingredients

Rempah

  • 20 fresh red jalapeņo chiles, sliced
  • 8 medium onion, sliced
  • 20 cloves garlic
  • 1" cube blachan
  • 1 C vegetable oil

Main

  • 6 tbsp dried shrimp
  • 2 lbs long beans, trimmed and cut into 1" lengths
  • 1 1/3 C water
  • 4 tsp sugar
  • 2 tsp salt

Procedure

  1. Cover dried shrimp with water for 10 minutes. Drain. Mince find in a food processor or blender, set aside.
  2. Grind the chiles, shallots, garlic, and blachan to a smooth paste. Add water if needed.
  3. Heat the oil in a wok over medium heat.
  4. Add the ground mixture, and fry stirring constantly, until completely combined with the oil, about 3 to 5 minutes.
  5. When the rempah is cooked, add the shrimp.
  6. Cook over medium high heat until the mixture is crumbly.
  7. Toss in green beans, stir fry for 2 minutes.
  8. Add water and season with sugar and salt.
  9. Stir-fry quickly until the sauce reduces and glazes the beans
