Jungle Meat Curry

Ingredients

  • Meat of some type in enough quantity
  • veg oil
  • .5 C green curry paste
  • .25 C fish sauce
  • 3 in piece galangal, peeled and finely chopped.
  • .25 C green peppercorns
  • 12 kaffir lime leaved, torn
  • 3 tbsp whisky
  • 1 Q chicken stock
  • 8 oz long beans in 1 in lengths
  • 32oz chestnut mushrooms
  • 4 piece canned bamboo shoot, shredded
  • red chilli flakes

Actions

  1. Cut meat into bitesized pieces
  2. Heat oil in wok. Stir fry curry paste for 30 seconds
  3. Add fish sauce and the meat. Stir fry until meat is browned.
  4. Add galangal, pepper corns, lime leaves, and whisky. Then pour in stock.
  5. Bring to boil. Add vegetables, return to simmer and cook gently 2-3 minutes.
  6. Serve with chilli flakes.
