Jungle Meat Curry
Ingredients
- Meat of some type in enough quantity
- veg oil
- .5 C green curry paste
- .25 C fish sauce
- 3 in piece galangal, peeled and finely chopped.
- .25 C green peppercorns
- 12 kaffir lime leaved, torn
- 3 tbsp whisky
- 1 Q chicken stock
- 8 oz long beans in 1 in lengths
- 32oz chestnut mushrooms
- 4 piece canned bamboo shoot, shredded
- red chilli flakes
Actions
- Cut meat into bitesized pieces
- Heat oil in wok. Stir fry curry paste for 30 seconds
- Add fish sauce and the meat. Stir fry until meat is browned.
- Add galangal, pepper corns, lime leaves, and whisky. Then pour in stock.
- Bring to boil. Add vegetables, return to simmer and cook gently 2-3 minutes.
- Serve with chilli flakes.
