José's Ceviche
Ingredients
- 3 lbs red snapper
- 1/3 C chopped onion
- 2C lime juice
- 1/2 C olive oil
- 1 tbsp chopped parsley
Procedure
- cut fish into 3/4" cubes, place in bowl.
- Add onion and lime juice.
- Mix and marinate in refrigerator for at least 3 hours.
- Drain, arrange on dish, season with salt and pepper.
- Drizzle with oil and sprinkle with chopped parsley.
