José's Ceviche

Ingredients

  • 3 lbs red snapper
  • 1/3 C chopped onion
  • 2C lime juice
  • 1/2 C olive oil
  • 1 tbsp chopped parsley

Procedure

  1. cut fish into 3/4" cubes, place in bowl.
  2. Add onion and lime juice.
  3. Mix and marinate in refrigerator for at least 3 hours.
  4. Drain, arrange on dish, season with salt and pepper.
  5. Drizzle with oil and sprinkle with chopped parsley.
