Hot and Sour Noodle Salad

Ingredients

  • 800g thin rice noodles
  • 4 bunches cilantro
  • 8 tomatoes, seeded and sliced
  • 18 oz baby corn cobbs, sliced
  • 16 scallions
  • 4 red bell pepper, seeded and finely chopped
  • juice of 8 limes
  • 8 small fresh green chillies, seeded and finely chopped
  • 3 tbsp granulated sugar
  • 4 C peanuts, toasted and chopped
  • 3 tbsp soy sauce
  • salt

Procedure

  1. Snap noodles into short lengths and boil in lightly salted water for 3-4 minutes. Drain, rinse under cold water, then drain again.
  2. Set aside some corriander for garnish. Chop the remaining leaves and place them in a large serving bowl.
  3. Add the noodles, tomato, corn, spring onions, red pepper, lime juice, chillies, sugar, and toasted peanuts.
  4. Season with soy sauce and salt as necessary.
  5. Toss thoroughly and top with reserved corriander.
