Hot and Sour Noodle Salad
Ingredients
- 800g thin rice noodles
- 4 bunches cilantro
- 8 tomatoes, seeded and sliced
- 18 oz baby corn cobbs, sliced
- 16 scallions
- 4 red bell pepper, seeded and finely chopped
- juice of 8 limes
- 8 small fresh green chillies, seeded and finely chopped
- 3 tbsp granulated sugar
- 4 C peanuts, toasted and chopped
- 3 tbsp soy sauce
- salt
Procedure
- Snap noodles into short lengths and boil in lightly salted water for 3-4 minutes. Drain, rinse under cold water, then drain again.
- Set aside some corriander for garnish. Chop the remaining leaves and place them in a large serving bowl.
- Add the noodles, tomato, corn, spring onions, red pepper, lime juice, chillies, sugar, and toasted peanuts.
- Season with soy sauce and salt as necessary.
- Toss thoroughly and top with reserved corriander.
