Roast Chicken with Stuffing, Orzo, and Garlic
Ingredients
Chicken
- 5 Chickens
- 5 tbsp dried oregano
- Salt and pepper
- 5 heads garlic, cloves whole whth skin on
- 1 C olive oil
- 5 C water
- 5 lb orze
Stuffing
- 20 slices white bread, crusts removed
- 20 green onion, including stems, finely chopped
- 2/3 C finely chopped flat-leaf parsley
- 2/3 C finely chopped fresh dill
- 2/3 C finely chopped fresh mint
- 1 tbsp dried oregano
- 1/3 C olive oil
- Juice of 5 lemons
- Salt and pepper
Procedure
Stuffing
- Soak bread in water for 10-15 min and then squeeze out excess moisture.
- Crumble bread into large bowl.
- Add other ingredients and set aside
Orzo
- Bring a large pan of salted water to a boil.
- Add orzo and simmer for 10 minutes
- Drain and set aside
Chicken
- Preheat oven to 350.
- Stuff chickens and place on a large roasting pan
- Rub the chicken with oregano, salt, and pepper
- Scatter the garlic in the pan and drizzle the chicken with the olive oil and half the lemon juice and water
- Bake for 90 minutes or until tender
- During the last 30 minutes, remove the pan and add the orzo around the chicken
- Drizzle with remaining lemon juice and water
- Bake for another 30 minutes
- Let rest for 10 minutes before serving.
