Roast Chicken with Stuffing, Orzo, and Garlic

Ingredients

Chicken

  • 5 Chickens
  • 5 tbsp dried oregano
  • Salt and pepper
  • 5 heads garlic, cloves whole whth skin on
  • 1 C olive oil
  • 5 C water
  • 5 lb orze

Stuffing

  • 20 slices white bread, crusts removed
  • 20 green onion, including stems, finely chopped
  • 2/3 C finely chopped flat-leaf parsley
  • 2/3 C finely chopped fresh dill
  • 2/3 C finely chopped fresh mint
  • 1 tbsp dried oregano
  • 1/3 C olive oil
  • Juice of 5 lemons
  • Salt and pepper

Procedure

Stuffing

  1. Soak bread in water for 10-15 min and then squeeze out excess moisture.
  2. Crumble bread into large bowl.
  3. Add other ingredients and set aside

Orzo

  1. Bring a large pan of salted water to a boil.
  2. Add orzo and simmer for 10 minutes
  3. Drain and set aside

Chicken

  1. Preheat oven to 350.
  2. Stuff chickens and place on a large roasting pan
  3. Rub the chicken with oregano, salt, and pepper
  4. Scatter the garlic in the pan and drizzle the chicken with the olive oil and half the lemon juice and water
  5. Bake for 90 minutes or until tender
  6. During the last 30 minutes, remove the pan and add the orzo around the chicken
  7. Drizzle with remaining lemon juice and water
  8. Bake for another 30 minutes
  9. Let rest for 10 minutes before serving.
