Fried Noodles with Chicken and Broccoli

Serves 16

Ingredients

  • 6 tbsp oil
  • 4 large garlic cloves, chopped
  • 3/4C chopped onions
  • 1 lb boneless, skinless chicken breast, chopped
  • 4 egg
  • 20 oz rice noodles, soaked
  • 6 tbsp jaggery
  • 4 tbsp tamarind water
  • 1C light soy sauce
  • 5C broccoli florets and stalks
  • 4 tbsp chopped red bell pepper
  • 2C chopped green onions
  • 4C been sprouts
  • .5C crushed roasted nuts
  • 2 tsp pepper
  • cilantro to garnish

Process

  1. Heat oil in wok
  2. Add garlic, onions, and chopped chicken
  3. Stir fry over high heat for 1 minute
  4. Lower the head and break an egg into the mixture stirring constantly.
  5. Add the noodles, sugar, tamarind water, soy sauce, and broccoli and cook for 2 minutes
  6. Add the remaining ingredients, turn the heat up and stir fry vigorously for 1 minute.
  7. Turn into serving dish and garnish with cilantro
