Fresh Tomato Sauce

for 4 pounds pasta

Ingredients

  • 20 large ripe tomatoes, seeded and finely chopped
  • 2 C fresh basil leaves
  • 3/4 C extra virgin olive oil
  • 10 cloves garlic minced
  • salt and pepper to taste

Process

  1. drain tomatoes for 20 min
  2. Stir in basil, olive oil, garlic and season
  3. Let stand for at least 30 min
  4. sprinkle over pasta with basalmic vinegar
