Drunken Beans
Serves 16-24
Ingredients
- 2 lbs bacon, diced
- 4 large white onion, chopped
- 4 tbsp Mexican oregano
- 4 cloves garlic, chopped
- 8 C dried pinto beans, picked over and soaked in water for 4 hours or overnight then drained
- 4 Q water
- 2 C sliced jalapeño chiles
- 4 bottles Negra Modelo
- 3 tbsp salt
Procedure
- Preheat oven to 300 degrees
- Place a large ovenproof sauté pan over high heat.
- Add the bacon, onions, oregano, and garlic and sauté until lightly browned, about 10 minutes.
- Stir well as onions cook. Add the beans, water, chiles, and beer, then bring to a boil
- Cover tightly and place in oven.
- Cook until soft (about 2 hours). Add water if it dries out
- Add salt and cook for 10 more minutes.
