Drunken Beans

Serves 16-24

Ingredients

  • 2 lbs bacon, diced
  • 4 large white onion, chopped
  • 4 tbsp Mexican oregano
  • 4 cloves garlic, chopped
  • 8 C dried pinto beans, picked over and soaked in water for 4 hours or overnight then drained
  • 4 Q water
  • 2 C sliced jalapeño chiles
  • 4 bottles Negra Modelo
  • 3 tbsp salt

Procedure

  1. Preheat oven to 300 degrees
  2. Place a large ovenproof sauté pan over high heat.
  3. Add the bacon, onions, oregano, and garlic and sauté until lightly browned, about 10 minutes.
  4. Stir well as onions cook. Add the beans, water, chiles, and beer, then bring to a boil
  5. Cover tightly and place in oven.
  6. Cook until soft (about 2 hours). Add water if it dries out
  7. Add salt and cook for 10 more minutes.
