Doro Wot
Serves 16
Ingredients
- 2 C butter or ghee
- 8 large yellow onion, diced
- 3 C tomato paste
- 12 C cold water
- 3 tbsp garlic salt
- 1.5 tbls ground black pepper
- 3 tbsp berbere
- 8 lbs chicken
- 24 hard boiled eggs
Precedure
- Melt butter in pan and sauté onions for 10 minutes or until golden.
- Mix tomato paste with 2 C water to form a creamy pate.
- Stir the paste into the onions, garlic salt, pepper, berbere and remaining water.
- Adjust seasoning and simmer on low for 10 minutes.
- Poke chicken and eggs all over with fork and add to sauce. Stir well and ensure coated.
- Simmer on low for 30-40 minutes (until done)
