Doro Wot

Serves 16

Ingredients

  • 2 C butter or ghee
  • 8 large yellow onion, diced
  • 3 C tomato paste
  • 12 C cold water
  • 3 tbsp garlic salt
  • 1.5 tbls ground black pepper
  • 3 tbsp berbere
  • 8 lbs chicken
  • 24 hard boiled eggs

Precedure

  1. Melt butter in pan and sauté onions for 10 minutes or until golden.
  2. Mix tomato paste with 2 C water to form a creamy pate.
  3. Stir the paste into the onions, garlic salt, pepper, berbere and remaining water.
  4. Adjust seasoning and simmer on low for 10 minutes.
  5. Poke chicken and eggs all over with fork and add to sauce. Stir well and ensure coated.
  6. Simmer on low for 30-40 minutes (until done)
