Cucumber and Pineapple Sambal

Serves 24

Ingredients

  • 2 fresh pineapple
  • 1.5 halved lengthwise
  • 6 oz dried shrimp
  • 3 large fresh red chilli, seeded
  • 3 .5" cube fish paste wrapped in foil and dry fried for 5 minutes
  • juice of 3 lemons or limes
  • jaggery to taste
  • salt

Procedure

  1. Cut pineapple into thin slices
  2. Thinly slice cucumber on a bias
  3. Chop dried shrimp finely in a food processor
  4. Add the chillies, shrimp paste and lemon or lime juice and process to a paste
  5. rinse the cucumber and dry on kitchen paper.
  6. mix the pineapple and chill.
  7. Just before serving, spoon on the spice mixture and jaggery.
