Cucumber and Pineapple Sambal
Serves 24
Ingredients
- 2 fresh pineapple
- 1.5 halved lengthwise
- 6 oz dried shrimp
- 3 large fresh red chilli, seeded
- 3 .5" cube fish paste wrapped in foil and dry fried for 5 minutes
- juice of 3 lemons or limes
- jaggery to taste
- salt
Procedure
- Cut pineapple into thin slices
- Thinly slice cucumber on a bias
- Chop dried shrimp finely in a food processor
- Add the chillies, shrimp paste and lemon or lime juice and process to a paste
- rinse the cucumber and dry on kitchen paper.
- mix the pineapple and chill.
- Just before serving, spoon on the spice mixture and jaggery.
