Chipotle Rub

Ingredients

  • .5C corn oil
  • 10 Chipotle chiles, seeded and deveined
  • 10 Ancho chiles, seeded and deveined
  • 50 cloves garlic
  • 3 C kosher salt
  • .5 C dried Mexican oregano, toasted

Procedure

  1. Heat the oil in a small sauce pan until hot but not smoking.
  2. Fry the chiles 1 at a time until they are puffed and brown (about 10 seconds). Do not let them burn.
  3. Drain on paper towels and set aside until they are cool and crisp
  4. Grind the chilies in a food processor along with garlic.
  5. Add salt to the mixture.
  6. Let dry in a warm oven until no longer moist.
  7. Grind dried rub in a spice grinder.
