Chipotle Rub
Ingredients
- .5C corn oil
- 10 Chipotle chiles, seeded and deveined
- 10 Ancho chiles, seeded and deveined
- 50 cloves garlic
- 3 C kosher salt
- .5 C dried Mexican oregano, toasted
Procedure
- Heat the oil in a small sauce pan until hot but not smoking.
- Fry the chiles 1 at a time until they are puffed and brown (about 10 seconds). Do not let them burn.
- Drain on paper towels and set aside until they are cool and crisp
- Grind the chilies in a food processor along with garlic.
- Add salt to the mixture.
- Let dry in a warm oven until no longer moist.
- Grind dried rub in a spice grinder.
