Chicken and Sausage Jambalaya

Ingredients

  • 11 lbs chicken pieces (drumsticks, thighs with skin and bones)
  • .5 C vegetable oil
  • 3 lbs andouille sausage, cut crosswise into .25" thick pieces
  • 6 medium onions, chopped
  • 4 celery ribs, chopped
  • 2 green bell pepper, chopped
  • 8 large garlic cloves, finely chopped
  • 1 Q chicken broth
  • 3 C water
  • 2 14-oz can whole tomatoes, drained and chopped
  • .5 tsp cayenne
  • 5 C long grain white rice, rinsed and drained well
  • 2 C thinly sliced scallion greens
