Chicken and Sausage Jambalaya
Ingredients
- 11 lbs chicken pieces (drumsticks, thighs with skin and bones)
- .5 C vegetable oil
- 3 lbs andouille sausage, cut crosswise into .25" thick pieces
- 6 medium onions, chopped
- 4 celery ribs, chopped
- 2 green bell pepper, chopped
- 8 large garlic cloves, finely chopped
- 1 Q chicken broth
- 3 C water
- 2 14-oz can whole tomatoes, drained and chopped
- .5 tsp cayenne
- 5 C long grain white rice, rinsed and drained well
- 2 C thinly sliced scallion greens
