Charred Spiced Bonito Tacos
Ingredients
- 4 lbs bonito, mackeral, or yellowfin tuna filet cut into 2x4x1" strips.
- .5 C lime juice
- 1 C olive oil
- .5C chipotle rub
- .5C diced radish
- .5C thinly sliced scallion, white and green parts
- CharredTomatoMintSalsa
- Tortillas
Procedure
- In a nonreactive bowl, toss the fish with lime juice and 1 C olive oil, and Chipotle Rub.
- Marinate in refrigerator covered for 1 hour.
- Oil grill and cook fish until pink in the middle - about 3 minutes.
- Place in warm bown and shred fish, taste for seasoning, add more rub or lime if necessary.
- Top with radish and scallion.
- Serve with salsa and tortillas.
