Charred Spiced Bonito Tacos

Ingredients

  • 4 lbs bonito, mackeral, or yellowfin tuna filet cut into 2x4x1" strips.
  • .5 C lime juice
  • 1 C olive oil
  • .5C chipotle rub
  • .5C diced radish
  • .5C thinly sliced scallion, white and green parts
  • CharredTomatoMintSalsa
  • Tortillas

Procedure

  1. In a nonreactive bowl, toss the fish with lime juice and 1 C olive oil, and Chipotle Rub.
  2. Marinate in refrigerator covered for 1 hour.
  3. Oil grill and cook fish until pink in the middle - about 3 minutes.
  4. Place in warm bown and shred fish, taste for seasoning, add more rub or lime if necessary.
  5. Top with radish and scallion.
  6. Serve with salsa and tortillas.
