Bruschetta di Pomodori

Serves 20

Ingredients

  • 10 tomatoes chopped
  • 30 fresh basil leaves torn into small pieces
  • 1.25 C extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • coarse salt to taste
  • 40 slices coarse country bread, each about .5" thick
  • 10 large cloves garlic

Process

  • Combine tomatoes, basil, olive oil, vinegar, and salt in a bowl.
  • Toast bread and rub one side with garlic
  • Arrange garlic side up and spread tomatoes over the top.
