Bruschetta di Pomodori
Serves 20
Ingredients
- 10 tomatoes chopped
- 30 fresh basil leaves torn into small pieces
- 1.25 C extra virgin olive oil
- 1 tbsp balsamic vinegar
- coarse salt to taste
- 40 slices coarse country bread, each about .5" thick
- 10 large cloves garlic
Process
- Combine tomatoes, basil, olive oil, vinegar, and salt in a bowl.
- Toast bread and rub one side with garlic
- Arrange garlic side up and spread tomatoes over the top.
