Beef Fajitas
Serves 18-24
Ingredients
- 6 lbs skirt steak
- .5 C ChipotleRub
- 3 small white onions, diced
- 2 bottles Negra Modelo
- 1.5 C olive oil
- 6 bunches of scalions, trimmed
- Salt and fresh ground pepper to taste
- Cilantro sprigs and lime wedges for garnish
Procedure
- Put the steak in a nonreactive platter and sprinkle both sides with ChipotleRub and onion and then moisten with the beer and olive oil
- Let marinate 30 minutes
- Grill over high heat.
- Brush scalions with oil and season
- Grill until tender
