Beef Fajitas

Serves 18-24

Ingredients

  • 6 lbs skirt steak
  • .5 C ChipotleRub
  • 3 small white onions, diced
  • 2 bottles Negra Modelo
  • 1.5 C olive oil
  • 6 bunches of scalions, trimmed
  • Salt and fresh ground pepper to taste
  • Cilantro sprigs and lime wedges for garnish

Procedure

  • Put the steak in a nonreactive platter and sprinkle both sides with ChipotleRub and onion and then moisten with the beer and olive oil
  • Let marinate 30 minutes
  • Grill over high heat.
  • Brush scalions with oil and season
  • Grill until tender
