Baked Vegetables with Prunes (Morocco)
Ingredients
- 1C olive oil
- 8 red onions quartered
- 12 cloves garlic, bruised and unpeeled
- 8 sliced carrots
- 4 lbs pumpkin
- 4 lbs orange sweet potato
- 2 tbsp RasElHanout
- 4 red chili, seeded and sliced
- 6 C vegetable stock
- 3.5 C pitted prunes
- .25C honey
Procedure
- Oil 4 12x16 baking dishes and add onions, garlic, and carrots.
- Toss well, bake in preheated 400 degree oven for 15 minutes.
- Peel pumpkin and sweet potato and cut into large chunks.
- Add to the dish along with the RasElHanout and red chili.
- Season and toss well.
- Bake for another 30 minutes.
- Stir in the stock, prunes, and honey and return to the oven for another 30 minutes.
