Baked Vegetables with Prunes (Morocco)

Ingredients

  • 1C olive oil
  • 8 red onions quartered
  • 12 cloves garlic, bruised and unpeeled
  • 8 sliced carrots
  • 4 lbs pumpkin
  • 4 lbs orange sweet potato
  • 2 tbsp RasElHanout
  • 4 red chili, seeded and sliced
  • 6 C vegetable stock
  • 3.5 C pitted prunes
  • .25C honey

Procedure

  1. Oil 4 12x16 baking dishes and add onions, garlic, and carrots.
  2. Toss well, bake in preheated 400 degree oven for 15 minutes.
  3. Peel pumpkin and sweet potato and cut into large chunks.
  4. Add to the dish along with the RasElHanout and red chili.
  5. Season and toss well.
  6. Bake for another 30 minutes.
  7. Stir in the stock, prunes, and honey and return to the oven for another 30 minutes.
