Black Bean and Pepper Salad
Ingredients
- 7 C black beans
- 1/4C olive oil
- 4 bay leaves
Dressing
- 5 pounds red bell peppers
- 1C virgin olive oil
- 1/4C sherry vinegar
- 2 C finely chopped onion
- 1/4C chopped parsley
Procedure
- Wash the beans and soak in a pan with 8 C of water for 2-3 hours.
- Add the oil and bay leaf and cook on medium heat for 90 minutes until cooked.
- Drain, allow to cool and place in salad bowl.
- Roast peppers and peal.
- Cut into 1/4" wide strips.
- Once beans are completely cold, add the oil and vinegar, onion, and peppers.
- Season with salt and mix well.
- Sprinkle with parsley and serve.
