Black Bean and Pepper Salad

Ingredients

  • 7 C black beans
  • 1/4C olive oil
  • 4 bay leaves

Dressing

  • 5 pounds red bell peppers
  • 1C virgin olive oil
  • 1/4C sherry vinegar
  • 2 C finely chopped onion
  • 1/4C chopped parsley

Procedure

  1. Wash the beans and soak in a pan with 8 C of water for 2-3 hours.
  2. Add the oil and bay leaf and cook on medium heat for 90 minutes until cooked.
  3. Drain, allow to cool and place in salad bowl.
  4. Roast peppers and peal.
  5. Cut into 1/4" wide strips.
  6. Once beans are completely cold, add the oil and vinegar, onion, and peppers.
  7. Season with salt and mix well.
  8. Sprinkle with parsley and serve.
