Béchamel Sauce

Ingredients

  • 4 C milk
  • 2 bay leaves
  • 1/2 tsp allspice berries
  • 8 tbsp butter
  • 1 C all-purpose flour
  • 3 tbsp grated parmesian
  • 1/2 tsp nutmeg

Procedure

  • Heat the milk, bay leaves, and all spice in a saucepan over low heat.
  • Melt the butter in another saucepan, then add the flour and whisk for about 5 minutes until combined.
  • Slowly ladle the hot milk into the four mixture (discarding bay leaves and allspice).
  • Whisk constantly until the sauce thickens.
  • Remove from head.
  • When slightly cooled, stir in the cheese and nutmeg.
