Avocado and Corn Salsa

Ingredients

  • 3 ears corn, husked and desilked
  • 3 ripe but firm avocados, diced large
  • 1 red onion, diced small
  • 1 red bell pepper, diced small
  • .33C virgin olive oil
  • .25 C red wine vinegar
  • 1 tbsp minced garlic
  • 8 shots Tabasco
  • 1 tbsp ground cumin
  • 1 tsp chili powder
  • .25 C chopped fresh oregano
  • .5 C lime juice
  • salt and pepper

Procedure

  1. Blanch or grill the corn.
  2. Cut the kernels off the cobs and mix with remaining ingredients except avocado.
  3. Fold in avocado.
