Avocado and Corn Salsa
Ingredients
- 3 ears corn, husked and desilked
- 3 ripe but firm avocados, diced large
- 1 red onion, diced small
- 1 red bell pepper, diced small
- .33C virgin olive oil
- .25 C red wine vinegar
- 1 tbsp minced garlic
- 8 shots Tabasco
- 1 tbsp ground cumin
- 1 tsp chili powder
- .25 C chopped fresh oregano
- .5 C lime juice
- salt and pepper
Procedure
- Blanch or grill the corn.
- Cut the kernels off the cobs and mix with remaining ingredients except avocado.
- Fold in avocado.
