Achiote Recado

Ingredients

  • 2 tbsp annatto seeds
  • 1 tsp freshly ground allspice
  • 2 tsp freshly ground pepper
  • .5 C ancho chile powder
  • 4 tsp kosher salt
  • 1 tbsp toasted and ground mexican oregano
  • 3 cloves garlic, pan roasted until brown and soft, then peeled
  • half medium white onion, thickly sliced, pan roasted until brown and soft
  • .25 C pineapple vinegar or apple cider vinegar
  • 1.5 C freshly squeezed orange juice
  • .25 C freshly squeezed lemon juice

Procedure

  1. Put annatto seeds and water in a small saucepan and place over high heat.
  2. bring to a boil, cover, and lower heat to a simmer. Cook 30 minutes.
  3. Remove from heat and let steep 2 hours or until softened.
  4. Drain and put in a blender or food processor along with all the remaining ingredients.
  5. Blend until smooth
