Abesha Gomen (Ethiopian collard greens)
Serves 20
Ingredients
- 5 lb collard greens
- 1.25 C olive oil
- 10 small red onions, finely chopped
- 5 garlic cloves, crushed
- 1 tbsp grated fresh ginger
- 10 green chiles, seeded and sliced
- 2.5 C water
- 5 red bell pepper, seeded and sliced
Procedure
- Wash the greens and strip leaves from stalks.
- Steam the leaves over a pan of boiling water for about 5 min. until slightly wilted.
- Cool, then press out excess water.
- Slice the greens thinly.
- Heat the oil and fry the onions until browned.
- Add the garlic and ginger and fry with onions for a few minutes, then add chiles and a little of the water and cook for 2 minutes.
- Add the greens, red pepper, and the remaining water.
- Season with salt and pepper, mix well, cover and cook over low heat for about 15 minutes.
