Abesha Gomen (Ethiopian collard greens)

Ingredients

  • 5 lb collard greens
  • 1.25 C olive oil
  • 10 small red onions, finely chopped
  • 5 garlic cloves, crushed
  • 1 tbsp grated fresh ginger
  • 10 green chiles, seeded and sliced
  • 2.5 C water
  • 5 red bell pepper, seeded and sliced

Procedure

  1. Wash the greens and strip leaves from stalks.
  2. Steam the leaves over a pan of boiling water for about 5 min. until slightly wilted.
  3. Cool, then press out excess water.
  4. Slice the greens thinly.
  5. Heat the oil and fry the onions until browned.
  6. Add the garlic and ginger and fry with onions for a few minutes, then add chiles and a little of the water and cook for 2 minutes.
  7. Add the greens, red pepper, and the remaining water.
  8. Season with salt and pepper, mix well, cover and cook over low heat for about 15 minutes.
